| Summary, etc. | Este libros se basa en una investigación doctoral realizada en la Universidad de Turku, Finlandia. El objetivo principal de dicha investigación fue estudiar el valor nutricional y compuestos bioactivos en los granos andinos. También se hizo una revisión sobre las especies alimenticias más importantes que crecen en el área andina.<br/><br/>El área andina de América del Sur es un centro muy importante para la domesticación de plantas alimenticias. Esta región es el origen botánico de cultivos de importancia mundial como la papa, el maní y el tomate. Otras plantas menos conocidas como la quinua (Chenopodium quinua), kañiwa (chenopodiumpallidicaule), kiwicha (Amaranthuscaudatus) tarwi (Lupinusmutabilis) fueron también domesticadas por los antiguos agricultores andinos.<br/><br/>Muchos estudios han dado cuenta del alto valor nutricional de los granos andinos. Destacan su contenido de proteínas, con una composición balanceada de aminoácidos de alto valor biológico, aceites de alta calidad y minerales esenciales. También son fuente potenciales de compuestos bioactivos tales como polifenoles y fibra dietética. |
