Summary, etc.	El café soluble o instantáneo es un importante producto de la industria cafetera. Para fabricarlo, se prepara un extracto mezclando con agua caliente el café tostado y molido de forma tosca. A continuación se separa el agua del extracto por diversos métodos, como desecación por pulverización o al vacío. La liofilizaciónes otro método que consiste en congelar el café para a continuación extraer el agua por sublimación. El producto se envasa al vacío en botes o latas que se cierran herméticamente.<br/>Puede extraerse la cafeína del café tratando el grano verde con disolventes organoclorados. Después de eliminar los disolventes, el grano se tuesta de la forma habitual. El café descafeinado lo consumen quienes son demasiado sonsibles a la cafeína presente en el café normal.
