Summary, etc. El presente trabajo de investigación tiene la finalidad de obtener un producto de consumo masivo que cumpla los requerimientos nutricionales, económicos y de aceptación popular. Para tal efecto, se ha utilizado la soya como fuente enriquecedora del pan a elaborarse, sustituyendo la harina de trigo por torta de soya en niveles de 0,5, 10 y 15%.<br/>
