| Summary, etc. | El enfoque de este libro es sobre las tecnologías que tradicionalmente se han utilizado para la conservación y elaboración de alimentos, y también de aquellas que están emergiendo y que han llegado a aplicarse más ampliamente en la industria alimentaria. Es importante considerar tanto la utilización del calor como un mecanismo de conservación (por ej., envasado, UHT, etc.) como también como una herramienta que produce cambios de textura y estructura en los productos (por ej., fritura, horneado, bajo vacío) para cubrir las demandas en aumento de los consumidores en todo el mundo.<br/>Las dos primeras partes del libro se enfocan a las tecnologías tradicionales en envases y modo UHT y en los temas de medición y control. Estos capítulos recogen dichos aspectos como técnicas para la validación de la eficacia de un proceso térmico y las tendencias en las tecnologías actuales que son ampliamente manejadas por la demanda de nuevos productos en diferentes formatos de envasado que ofrecen una conveniencia añadida al consumidor.<br/><br/> |
