| Summary, etc. | La ingeniería de los alimentos es a menudo la primera asignatura en la que el estudiante de ciencia de los alimentos analiza de forma cuantitativa la interacción entre la física y las operaciones de transferencia de energía con alimentos. Es también frecuentemente la primera oportunidad para el estudiante de aplicar las "matemáticas a través de cálculos" necesario en los programas de ciencias de los alimentos. En este presente texto no sólo introduce al alumno los principios de ingeniería de los alimentos de manera que él o ella pueda intercambiar conceptos con sus compañeros o con equipos de varias personas de la industria , sino que establece el proceso de pensamiento crítico y de solución de problemas reales, hecho tan apreciado hoy en día. |
